As I understand it, Gnome 3 is the whole thing - libraries, applications, file manager, icons, themes, etc. Gnome shell is one part of Gnome 3, namely the part you interact with when you've not launched any applications. Theoretically you can use Gnome 3 without Gnome shell - provided you have another shell application which can handle it, like Ubuntu's Unity.
I'm not sure what analogy will be helpful to you, so I'll go with a wildly inappropriate one. Imagine Gnome 3 as a penis. Gnome shell is a condom on top of it. The penis plus condom together is the tool you would use. The condom, being the shell, is the part one would interact with, for example when giving handjobs or fellatio. You can use the penis without the condom too. You can even put a different condom on top of your penis if you want, for example the Ubuntu Unity condom, which has launchers on the left side which you can't move to the right.

Na stranu sami shell, ali to da treba ili stisnuti Alt ili instalirati ekstenziju da morem ugasit komp je jedna od vecih bedastoca (otprilike shvacam logiku tog poteza, ali svejedno).
